Deconstructed Spring Roll Salad
Raise your hand if you also think the peanut sauce is the best part of a spring roll 🙋🏼♀️🥲
Let’s call this a deconstructed spring roll salad, loaded with plant based protein, fiber, and tons of nutrients to get you going 🫛
Also the best part? You can throw in any veggies you have on hand, measure with the heart, and expect this one to be 10/10 every single time.
For the salad I mixed together:
-1 head of lightly steamed broccoli
-1 cup shredded carrots
-1 red bell pepper
-1 cup snap peas (sliced)
-1 pack of Trader Joe’s edamame beans
-1 pack Cubed tofu
-2-3 spring onions
For the dressing blend together:
- 1-2 dates (adjust to desired sweetness or you can also use maple syrup)
-2 tbsp peanut butter
-2 tbsp @benissimooils sesame oil (the best!)
-soy sauce and coconut aminos (adjust to desired salt level)
-water if needed to thin out
-optional: gojujang or sriracha for spice
Toss that salad up, top with crushed peanuts and more sesame seeds and enjoy!
