These Mediterranean Chicken Bowls are perfect for any weeknight meal or you can do a little meal prepping and make them ahead of time to enjoy on your lunch break all week long! PRO TIP: If you're pan-frying the chicken thighs, do so in our Benissimo Roasted Garlic Oil or more of the Benissimo Mediterranean Garlic Oil for extra delicious flavor!

Mediterranean Chicken Bowls

- Roughly 1 cup of chopped romaine lettuce
- 1/2 cup cooked quinoa
- 1 grilled or pan-fried chicken thigh
- Sliced cucumbers
- Chopped roma tomatoes
- 2 tbsp hummus
- 2 tbsp crumbled feta cheese
- 2-3 tbsp mozzarella block, chopped into cubes
- 1/2 avocado, sliced
- 2-3 tbsp Benissimo Mediterranean Garlic Oil

Combine all the ingredients together in a large bowl, drizzle the Benissimo Mediterranean Garlic Oil on top and enjoy! If you're meal prepping for the week ahead, it's best to leave the hummus and Benissimo Mediterranean Garlic separate to keep the lettuce from wilting.
